Brew Ratios
By weight: 1 gram of coffee per 16 grams of water
By volume: 1 rounded tablespoon per 4 ounces of water
Example: 4 rounded tablespoons for a 16 oz cup, or 2 rounded tablespoons for an 8oz cup
Water Temperature
Ideal brewing temperature is 195–205°F
Tip: If you don't have a thermometer, bring water to a boil, then let it sit for 30 seconds before using
Why This Matters
Using water that’s too hot would literally burn off the nuance we’re working so hard to deliver. Boiling water extracts bitter compounds, and reduces subtle flavor nuances like floral, chocolatey, and sweetness.
Brew Time by Method
Pour Over / Drip
– Brew time: 3½ to 4 minutes
– Medium grind
French Press
– Brew time: 4 minutes
– medium/Coarse grind
– Stir, steep, and press slowly
AeroPress
– Use 2 rounded tablespoons for 8oz
– Water temperature: around 200°F
– Stir for 10 seconds, steep for 1 minute, then press gently

Brewing Tips
– Use filtered water for best clarity and flavor
– Pre-wet paper filters to eliminate off-flavors
– Clean equipment regularly to avoid oil buildup and bitterness
